Pizza store aims for the top

By Callan Date
FRESH dough and a smile are the two keys to operating a successful pizza business according to Endeavour Hills couple Bassam and Kolda Khattar.
And those vital ingredients have resulted in Noble Pizza being tossed to the top of Melbourne’s pizza store pile.
The Noble Park business has made the final five in Victoria’s Best Pizza Challenge with the winner to be named at this weekend’s Good Food and Wine Show.
Noble Pizza is keen to impress the judges of the traditional category with two of its specialities – a tuna delight pizza and the old favourite, margherita pizza.
Ms Khattar said the family owned business was a passion for her and her husband.
“We have had the shop for the last three years and we really enjoy doing what we do,” Ms Khattar said.
She said the majority of business for the Douglas Street shop was made up of take-away and delivery orders but customers also have the option of dining in.
“Our meat lovers pizza would be the most popular. Then probably our chicken pizza, which is pretty special.
“Our Noble special, which has the lot, is popular too,” she said.
Ms Khattar said Noble Pizza dough was hand-made fresh at the start of each day. “It makes the pizzas the best,” she said.
According to competition organisers, the winners will “produce the most flavoursome, visually creative and commercially sustainable” pizza.
The eventual winner will go on to represent Victoria at the national finals in September in Sydney.
“We are just going to do our best and hopefully the judges will be impressed,” Ms Khattar said.
