Ambrosia cafe raises bar

IN January 2004, Danielle Finning and Gaston Robot opened Ambrosia – a unique combination cafe, bar and foodstore in Berwick.
The following 11 years have seen Ambrosia grow into one of the region’s finest eating establishments and the worthy winner of the hospitality category of this year’s Casey-Cardinia business awards.
“We didn’t even write a speech because we never thought we were going to win this,” Danielle said, accepting the award.
She congratulated the other category finalists, Cardinia Park Hotel and O.MY Restaurant.
“We were so proud to be up with you guys because you’re just amazing. Your quality of product is amazing,” she said.
Gaston thanked Ambrosia’s staff and customers.
“Without them it’s just four walls,” he said.
Danielle said said “the growth in the business has been amazing“.
“It’s been a challenging process, opening a business from scratch, but we’ve had an incredible amount of community support, and I think that’s been a real factor in our success.”
Part of Ambrosia’s popularity among diners local and from across Melbourne is its versatility, in both its service and menu.
Offering a modern Australian cuisine, guests are drawn to Ambrosia’s focus on share-style eating. Danielle said regular updates to the menu have played a key role in the development of the business.
It’s a philosophy based on keeping guests excited and satisfied.
“We really try and take pride in what we deliver. We listen to our guests and what they want,” she said.
“We want to give people something a little bit different, new and exciting.”
Also celebrated for its catering services, Ambrosia brings a level of flexibility rarely seen in industry.
“We can easily look after groups of 30, 40, 50. We have catering options, we can send a chef to their house and provide wait staff and we don’t ever stipulate a group menu, although that is an option.”
Ambrosia also gives guests the opportunity to add flair to their own kitchens through the quirky products sold in its foodstore.
“It’s all the things I love to eat!” Danielle laughs.
Fabulous food, a modern setting and a relaxed atmosphere have all been keys to success for Danielle and Gaston.
It’s all part of their simple, yet effective philosophy.
“Mostly for us, enjoy your moment, enjoy your friends and enjoy yourself.”
